Well it was probably a good thing I mortified my spirit by marathon tasting of cheap wine before the holiday. Yesterday (Xmas) we went through a couple of bottles of Cattier Blanc de blanc, a decent IGT, and a bottle of inexpensive but interesting Torrontes bubbly from argentina.

The rum used today was Flora de Cana 7 year old. (I actually like the 12 with this recipe better but it’s $15 more.)

I had a bottle of Le Rive, a soave classico the other night, by azienda agricola suavia. I imagine it will get 92-94 points out of Wine Spectator. Nice wine. Soave it ain’t.

I tried two new wines last night, Rico Suter Cabernet Sauvignon/Petit Verdot and Wyndam Estate Bin 525 Shiraz Grenache.
Not sure what to make of the Suter wine (from S. Africa.) Firstly it’s 15% which is headed towards vermouth territory. Secondly they recommend serving at 16 degrees.

Bolla amarone, roast beef, roasted potato & yams for supper.
It was freezing here yesterday. So back to the basics.
Bolla’s Amarone isn’t the best in the world but it’s never bad. It might have been my mood or it might have been the roast but this one seemed a little thinner than I remember.

Definitely a recipe worth repeating. The limes seem to be the key. Next time though, I’ll stew the hocks at least overnight.
Eating it cold today, it tastes great, but like all game, the texture is a little tougher than farm meat.
