The Economist (issue Nov. 27th – Dec. 3rd, Cover shot of a farmer in a diving hard hat) has an article on the wine headache.  To sum it up, there are three wine molecules – peptides – that are close analogues of common allergens, including one that resembles ragweed pollen.  As I’ve been saying for years, less than 10 per cent of the headaches are caused by Sulfites.
